Coffee capsules can be made from a number of different materials that directly impact the coffee’s taste and also our environment. The materials widely used are Aluminium, Compostable (plant or cornstarch-based) and PBT (Polybutylene Terephthalate) Plastic. Traditionally, Nestlé has been making their Nespresso® capsules out of aluminium, whilst alternative capsule manufacturers and coffee roasters have slowly adopted this format and others have been using the compostable or plastic capsules. The question on everyone’s mind is - how does the material or ‘make’ of the capsule affect our coffee drinking experience at home?
ALUMINIUM
Aluminium capsules from alternative capsule manufacturers that we have come across are completely airtight, 100% plastic-free and fully recyclable. With a quick rinse, you can even put them in with your household recycling just like a drink can, after you have removed the spent coffee inside. This format of capsule is popular because they feel ‘more premium’ while at the same time allowing the roasters to pack more coffee in. Coffees enjoyed from an aluminium capsule are more bodied and have more pronounced flavours.
COMPOSTABLE
Compostable capsules are made from various renewable raw products, that should degrade within six months with commercial composting and can be added to your local food waste collection. Compostable capsules are usually packaged in nitrogen-flushed air-tight pouches to maintain the freshness of the coffee. It is recommended to keep your compostable coffee capsules stored at room temperature in an airtight container after opening the pouch. From our experience, the paper seal produces clean tasting coffee, with low to medium body.
PBT PLASTIC
The majority of coffee capsules today are made from PBT, short for Polybutylene Terephthalate, food grade plastic with aluminium foil lids. Similar to aluminium capsules, most PBT capsules are airtight and sealed in an oxygen-free environment, allowing the coffee inside to stay fresher, longer. To recycle, rinse out the coffee grounds and separate the aluminium foil lids from the PBT capsule and place them in the respective household bins. Coffees brewed from a plastic capsule are complex in flavour with a varying mouthfeel depending on the coffee’s roast level.

Aptly named Red Eye, this drink was invented for passengers taking a long flight overnight, as fuel for the long day ahead. This would come in handy for Dads who have spent sleepless nights worrying about us (or still do). We think this is the one to start Father’s Day right.
We recommend a bright coffee capsule that would hold it’s flavour in brewed coffee, like the Kenya capsule by April Coffee Roasters. Expect to taste notes of blackberry and chocolate.

As unforgiving as the weather has been, it only gives us an excuse to have more iced coffees. We all know the feeling of aggressively sipping on our iced coffees as ice cubes threaten to dilute it, our Dads deserve better than that!
We did the math - 4 long shots gave us a tray of 16 coffee ice cubes. Just make a batch, keep stock in the freezer, and never run out of iced coffee again. Even better, we heard Dads enjoy a good coffee milkshake.
For this one, we used the Orthodox capsule, ST. ALi’s third wave twist on the classic Italian espresso blend. Notes of butterscotch, hazelnut and dark chocolate? Sounds like the perfect iced coffee to us, but don’t just take our word for it, let Dad decide.

To end Father’s Day, we’re slipping in this one for our Dads who appreciate a good cocktail hour. This is our own take on the Honeyed Gin Coffee from Kumiko, in Chicago.
“The botanicals of particular gins may highlight notes of various coffees or certain roasts,” Julia Momose of Kumiko says, and we concur. We used the Damaris Camposeco from Colonna Coffee, and it’s aromatic hints of black grape and cranberry were weaved into the gin and elevated, resulting in a sweet, fragrant cocktail that’s sure to impress Dad.

Founded by Patrik Rolf in 2016, April Coffee is a Nordic roastery based in Copenhagen, Denmark. Patrik has an impressive resume, which includes prestigious European roasters such as da Matteo in Gothenburg and Five Elephant in Berlin. Patrik is also a Coffee Masters tournament finalist and more recently, came in as runner-up at the 2019 World Brewers Cup in Boston. April focuses on roasting and their progressive style always aims to roast coffee to be transparent and sweet.
Together with his wife, Maxwell Colonna-Dashwood set up Colonna Coffee in Bath, UK. Maxwell has a long list of accolades, being a 3-time UK Barista Champion and World Barista Championship Finalist on another 3 occasions. Colonna are one of pioneering roasters to package ground specialty coffee into single-serve Nespresso compatible capsules and have been very popular since launch.
St. ALi is a major contributor to the rise of Melbourne’s cafe culture and defining specialty coffee in Australia. Head of Coffee, Matt Perger oversees everything coffee at St. ALi and is the 2012 World Brewers Cup Champion, a two-time Australian Barista Champion and a two-time World Barista Championship Finalist. St ALi was also represented at the London Coffee Masters on two occasions. You can find St. ALi cafes in Sydney, Melbourne and Jakarta.
Papa Palheta started roasting coffee from a quaint little cafe tucked away in an unassuming location in Singapore 10 years ago. They lead the way through Singapore’s Third Wave cafe boom and now roasts and purveys specialty coffee in Singapore and Malaysia. Papa Palheta always aims to source beans with transparency and traceability and roasts in micro batches that allows for meticulous quality control.
In 2010, chef-turned-roaster, Kiwi Kurt Stewart founded Volcano Coffee Works in London. Starting from a coffee cart, Volcano Coffee Works now roasts from two sites in London. In one of the world’s most fiercely competed specialty coffee scenes, Volcano Coffee Works supplies some 150 restaurants, cafe and office partners across the UK. Volcano Coffee Works has been represented at the London Coffee Masters on three separate occasions.
When the Third Wave coffee movement landed in the Philippines in 2013, Yardstick Coffee was ready to open its doors to those looking for a cup of specialty coffee. Yardstick is home to two-time Philippines National Barista Champion Aldrin Lumaban, who has also represented the Philippines at the World Barista Championship on two other occasions. Visiting their shop in Manila, you would find coffee in different formats from cold brew coffee, espresso-based drinks and most recently their Snack capsule line.
Specialty Coffee, from the beginning, has always preached provenance and process. Roasters and baristas have worked tirelessly to bring you excellence through their coffees. During that exchange, they share with you coffee’s nuances, as a result of farm-level practices, in addition to their roasting and brewing philosophies. To some, this brings intrigue and delight in the coffee drinking experience while some prefer to just sip some coffee without all the jargon.
Enter coffee capsules or ‘coffee pods’ depending on where you are in the world. This format has been around for a while now and it’s only recently that quality-focused roasters have explored this method of delivering their coffee. The movement is driven not only by quality but also accessibility. Since its inception, the capsule drinking audience have been accustomed to buying their capsules from a single source which has shaped their palate. Today, these Specialty Coffee roasters are sharing new coffees and flavours to that same audience without the theatrics, and sometimes snobbery, of Specialty Coffee.
